Dish of the Day: Whole Wheatery's spinach- and ricotta-stuffed shells

Whole Wheatery Eatery's spinach- and ricotta-stuffed shells are a filling way to maintain your waistline.

Whole Wheatery Eatery, located in the Oil Center at 326 Travis St., serves up two offerings for plate lunches every day: a meat lunch and a vegetarian lunch. One of its vegetarian lunches is the spinach-and ricotta-stuffed pasta shells with a surprising minty kick that's so good it's Tuesday's EatLafayette Dish of the Day.

Along with the main course, diners can choose two sides; pictured here are the red cabbage, braised in apple cider, garlic and onions, and the salad with housemade balsamic vinaigrette, cilantro and dill.

Co-owner Jean Goodman boasted that almost all of the plate lunches fall under 500 categories, and most of the sandwiches are under 400 calories.
