Sunset's Café Josephine is an Acadiana mainstay with an eclectic mix of menu offerings that range from classic South Louisiana cuisine to the unexpected. The restaurant has a reputation for rich food, but this filet mignon lettuce wrap is one of the lighter menu items that still offers a hearty flavor. Customize the marinade with your neighbor's homemade pepper jelly or your store-bought favorite. Marinate the meat and wrap the end result in butter lettuce leaves for a personal meal or appetizers for your at-home diners.

Recipe:
Serves one

Ingredients:
1 T garlic chili peppers
1 C pepper jelly
1/2 C hoisin sauce
2 T brown sugar
Butter lettuce leaves
1/2 lb. filet, cut into strips

Instructions:
Combine garlic chili peppers, pepper jelly, hoisin sauce and brown sugar. Marinate the filet for as long as you like, then cook to desired doneness. Wrap in lettuce leaves and enjoy.
