Down south, we know Boudin & Beer

Cochon's mastermind, Donald Link, drew a crowd Friday night in New Orleans, and Southern Living magazine took notice. At Friday night's Boudin & Beer in New Orleans, South Louisiana chef Donald Link, owner of Cochon, and his Link Restaurant Group served their famed smoked boudin. That same boudin that made an impresison on Southern Living also made an impression on Lafayette revelers at the annual Boudin Cook-off a few weeks ago.

Cochon smokes the boudin for 24 hours, and at the Lafayete location, it sits in an outdoor smoker than many don't even notice as they walk by.

This second annual Boudin & Beer festival was founded by Emeril Lagasse to benefit his foundation, which helps fund children's organizations in New Orleans, including the new New Orleans Center for Creative Arts and Saint Michael Special School.
