EatLafayette Dish of the Day: Sandra's spaghetti and meatballs

by Camille LeJeune

Nix traditional pasta for a carb-smart replacement of spaghetti squash.

Calorie counters, organic fiends, and all-natural eaters, look no further than Sandra's Cafe and Health Food Store's spaghetti squash and meatballs. Though it looks like traditional pasta, this spaghetti is actually the the stringy insides of an organic yellow squash that gives the texture of noodles.

The spaghetti is topped with meatballs made from hormone and antibiotic free grass fed beef, then paired with a roll and your choice of two organic sides. Go for the steamed carrots and kale for a colorful plate of nutrient-dense eats. This unique dish is served as a Wednesday special for $7.25 - come in today for lunch.  Both your belly and your conscious won't hesitate to go back for seconds.
