Praise the lard for La Boucherie Merci

The705 gives thanks to the community with a traditional Cajun experience at Vermilionville

The inaugural La Boucherie Merci happens Sunday, Nov. 24 from 7 a.m until 6 p.m. at Vermilionville as a partnership with the Lafayette Convention and Visitors Commission and the705. In case you aren't from here, a boucherie is a celebration of cooking pig that begins with the slaughter of the swine and encourages community participation to cook all parts of the pig and ends with a feast. What's the reason for such a shindig you ask? La Boucherie Merci is the705's way of saying thank you to the community.

Toby Rodriguez of Lache Pas Boucherie et Cuisine will teach about the art of the traditional boucherie with a little help from chefs of Astra Modern Market, Bread & Circus Provisions, Charley G's, Johnson's Boucaniere, Jolie's Louisiana Bistro, Ruffino's on the River, Social Southern Table & Bar, and Village Café. Sharpen your knives and bring your apron if you plan on lending a hand to prepare the feast of backbone stew, boudin, gratins (cracklins),sausage, tasso, ponce, hog's head cheese, ribs or ham.

And what would Vermilonville and a boucherie be without some music - a Cajun jam will start the day then Briggs Brown takes the stage at 1 p.m. From 4 p.m. until the pig is served the Lafayette Playboys featuring Jamie Bearb and Roddie Romero entertain the masses. And then, we eat.

La Boucherie Merci is only $5 admission and children 6 and under are free - members of the705 and Vermilionville receive admission on the house as well.
