Today's dish of the day begins with hardwood-grilled sea bass, finished with a seafood stock reduction and a bundle of fresh assorted vegetables to accent the delectable fish. Not only is it delicious, but it's gluten-free and low-fat.

Some other great choices include the poached halibut, which is a fillet of halibut poached in an Italian lemon-and-herb butter that is also gluten-free. If you're not feeling fishy, try the medallions of beef tenderloin - four ounces of center-cut beef tenderloin medallions that are pepper-crusted and grilled over hardwood and finished with mushrooms and red wine demi-glace.
