Chuy’s plans March opening

Austin-based Tex-Mex restaurant opening first Louisiana location in Ambassador Town Center.

Chicka-Chicka Boom-Boom Enchiladas

The new Costco-anchored Ambassador Town Center at the corner of Ambassador Caffery Parkway and Kaliste Saloom Road will be home to a location of Chuy’s in March.

Founded in Austin in 1982, the Tex-Mex chain is known for its affordable cuisine served in a fun and eclectic atmosphere. The food is made from scratch every day.

The menu includes hand-rolled tortillas cooked all day on a traditional comal in the dining room and salsa fresca made every hour. It also showcases dishes made from authentic recipes found in South Texas, New Mexico and Mexican border towns. Chuy’s serves homemade signature sauces, ranging from the mild Tomatillo Sauce to the spicy Hatch Green Chile that are made daily in their kitchen. A few signature items include Big As Yo’ Face Burritos, Chicka-Chicka Boom-Boom Enchiladas and margaritas made with fresh-squeezed lime juice.

Chuy’s will be open seven days a week for lunch and dinner.
