Bagel-sized bite of New York comes to Lafayette

Spurred by a trip to New York with his wife, Ryan Thibodeaux decided to master the art of the bagel.

After having success at the Hub City Farmers Market for over a year now, Ryan Thibodeaux has opened Thibodoughs on the corner of Eraste Landry and Ambassador Caffery.

Spurred by a trip to New York with his wife, Thibodeaux, already an active baker at home, decided to master the art of the bagel. The dough is a thick and complicated one and Thibodoughs rolls each bagel by hand, eschewing a bagel cutter for the tender, traditional touch. Thibodoughs mixes its own cream cheese, which includes plain, blueberry, strawberry and vegetable.

While they have only been open a few weeks Thibodeaux is seeing signs of a lot of traffic coming his way. The shop is located near Ambassador Caffery and I-10 so Acadiana commuters have an easy place to stop for breakfast and some coffee.

Thibodoughs also has other breads like muffins and cinnamon loaves. Kolaches made from Cajun sausage are available as well.
