Cochon and Bayou Teche Biere team up

Prepare yourself - in two weeks Cochon is having a special four-course dinner with Bayou Teche Biere as its special guest. Don't be jealous, you're invited, too.

Cochon's executive chef Kyle Waters has designed a dinner around Bayou Teche's different beers. Each course will be complimented by a specific brew. Karlos Knott, one of the forces behind Bayou Teche, will discuss craft beer and how it enhances Cajun and Creole cuisine.

Beginning at 7 p.m. Jan. 18, the first course is sausage and pickled peppers followed by charred shrimp, citrus and carrot rosti. The third is slow roasted beef short ribs with a satsuma glaze, fried kumquats and kale. For dessert it is Cochon's take on a chocolate lava cake with a warm stawberry center served with strawberry ice cream made with Bayou Teche's Biere Noire, which is also the beer served with this finish. The other beers to be served and paired are LA-31 Boucanee, LA-31 Grenade and Biere Joi Mello Dubbel.
