Festivals Acadiens et Créoles launches Friday evening at Girard Park with a culinary tradition: the official cutting of the boudin.
A six-foot length of the Cajun delicacy provided by Johnson's Boucaniere will be sliced up by local dignitaries and served to an eager crowd at 5 p.m. at Scène Ma Louisiane - that's the stage closest to Earl K. Long Gym on the nearby UL campus.
After the cutting, the chanky-chank. Jo-el Sonnier will take the stage at 5:30 followed an hour and a half later by swamp pop monsters Lil' Band O' Gold. The vendors will be working the gig, too.
