Mark T. Whitney and seven of his lucky friends were treated to EatLafayette/INDEats' second annual Chef's Table Experience at E's Kitchen. Whitney participated in the online contest, in which several baskets with varying ingredients were presented to readers in hopes of sparking their own creative culinary skills.
He chose Basket 4 - Chicken Thighs, Spinach, New Potatoes, Peanut Butter, Coffee Beans
, saying he would prepare:
- Roasted chicken thighs seasoned in fine ground coffee, dried lemongrass, white and black pepper, Thai red chili pepper, lime zest, ground ginger, dried mint, garlic powder, and toasted, ground coconut.
- sauce on top of roasted chicken: peanut butter and Thai red chili sauce with sweetened, condensed coconut milk and a bit of brown sugar.
- Thai stir-fried spinach stir-fried in oyster sauce, fish sauce and sesame oil.
- Fried, thin strips of new potato (seasoned with garlic and fried in duck fat) served atop stir-fried spinach for crunch and texture.

I’m absolutely and completely humbled and grateful to the chefs that made it happen, the friends that came, and to Lafayette. Seriously, thank you, from the bottom of my heart, to everyone involved.”
