Summertime as a child often meant making your own sandwich for lunch - and who doesn't love a classic peanut butter and jelly? Sophi P. Cakes is known for taking crazy flavors and morphing them into rad cupcakes and this July specialty cake is spot on - it's white cake filled with strawberry jelly and topped with a generous piping of housemade peanut butter cream cheese.

If a PBJ is not your ideal brown bag lunch favorite, check out some of the other monthly special cupcakes inspired by summer like the lemon-stawberry sha'bang, a lemon cake with strawberry cream cheese filling and lemon buttercream, or a good old fashion Granny's apple pie - we think this one is pretty self explanatory but might we suggest a brief blitz in the microwave and a scoop of vanilla ice cream to make it an a la mode.
