Dish of the Day: Sophi P's Southern Belle

Sweet as its namesake, Sophi P's Southern Belle cupcake was created in celebration of the 2012 EatLafayette campaign.

Using sweet potato mix from Bruce Foods, Sophi P's crafts a sweet potato cake, topped with a spiced praline buttercream and spicy pecans. "We're big on promoting the Southern culture," Sophi P. co-owner Jennifer Melancon says.

Sophi P. Cakes is Lafayette's original gourmet cupcakery, offering unique and flavorful cupcakes that suit any occasion. Every month Jennifer and her husband Dustin offer 12 distinct flavors that range from the familiar Red Velvet Deluxe to the famously fiery ATOMIC cupcake -a chocolate cake infused with a blend of cinnamon. Located on 3209 Johnson St., Sophi P's is open Tuesday through Friday from 10 a.m. to 6 p.m. and Saturday from 10 a.m. to 4 p.m.

Every week day during EatLafayette, the popular initiative to get more diners into locally owned restaurants, The Independent will spotlight a Dish of the Day; on Wednesdays, our Dish of the Day also becomes the Dish of the Week and is published in the print edition. The campaign runs June 18 to Aug. 15.

(From time to time, The Independent will also photograph some of the dishes.) When emailing please include information like any special cooking techniques used, the name of the chef or cook who prepared the dish, and whether the dish is part of an EatLafayette special. To be eligible for the Dish of the Week competition, cooks or chefs must also include the recipe and instructions on how to prepare the meal.
