‘All You Can Meat' heads to Vermilion Parish

by Walter Pierce

Evidently cracklins are Cajun bacon. We think they're more like Cajun heroin.

The Travel Channel's All You Can Meat program, which is about, well, eating meat, celebrates the Cajun way on Wednesday when it broadcasts a segment filmed at the farm of Lafayette attorney and CODOFIL board member Warren Perrin. According to Perrin, show host "Chewy" will get an inside look at the traditional way to prepare gratons, AKA cracklins, from world-champ chef Kyle Usie of Parks. The crew also filmed action at Ross Hebert's crawfish farm in Vermilion Parish and an ensuing crawfish boil presided over by Glen Viltz of Delcambre. The segment is devoted to "bacon."

All You Can Meat will air at 11:30 a.m. on the Travel Channel. Check your local listings.
