Though the weather may not agree with us just yet, it is autumn and local restaurants will begin changing their menus to accommodate the plethora of new produce rolling in the door, including squash.

Jolie's Louisiana Bistro's executive chef Manny Augello has crafted a new take on one of the most comforting dishes in the history of eating: a winter squash bisque that is both creamy and sharp.

Augello combines puréed and seasoned squash with the house-made fried country ham and skillet croutons for crunch, and then tops it with creme fraiche and a fine herb combination of tarragon, flatleaf parsley, chive and lavender. The ham provides a salty and savory addition, while the chive in the herb combination cuts the creamy squash-and-creme-fraiche combination. Because this is only the beginning of the season, the squash availability is not fleeting, but the bisque availability may be.
