EatLafayette Dish of the Day: Jolie's ceviche

Bring a pretty blonde to this Pinhook restaurant for a South American seafood classic.

Jolie's menu is full of options that are fresh, local and seasonal and the ceviche delivers on all three of these aspects. Executive chef, Morgan Angelle, has created a Louisiana twist on the South American dish of marinated raw seafood.

She blends fresh scallops, shrimp and yellowfin tuna into a Ruston peach salsa. The fish is marinated with the salsa and citrus juice, and when it's ready, served with a garnish of crispy salmon skins and housemade sesame crackers. The taste of the appetizer is clean and fresh from the citrus with hints of cilantro from the bed of fresh herbs the fish sits upon.
