Dish of the day: Viva la Waffle's Rosceaux

Southern love, food truck-style

Nothing says Southern flavor quiet like chicken and waffles and there's no better place to grab this dish for lunch than from Viva la Waffle.

The Rosceaux is one of chef Collin Cormier's most popular dish on his food truck's menu- and it was also one of the first dishes he started serving back in 2011 when he pioneered the food truck revolution in Lafayette.

Cormier starts with a crispy waffle filled with a buttermilk brined fried chicken breast and a spicy honey drizzle for $7. An extra buck will get you a little crunch with a blue cheese buttermilk slaw added.

Keeping with the theme, throw in a side of garlic butter waffle fries, grab a icy cold Swamp Pop soda, and throw down a picnic blanket or grab a curb to sit and enjoy your lunch on a nice spring day.

There're also several sweet options to compliment the savory selections like a waffle s'more or banana and Nutella combo.
