Crawfish Town USA Fresh Market opens

Johnny and Wendy Hebert have opened Crawfish Town USA Fresh Market next to their popular boiled crawfish restaurant in Breaux Bridge.

On Tuesday Johnny and Wendy Hebert opened Crawfish Town USA Fresh Market next to their popular boiled crawfish restaurant, located just off I-10 at 2815 N. Grandpoint Highway in Breaux Bridge. The market specializes in fresh Louisiana seafood, meats, produce and specialty prepared food items. It also sells beer and wine.

"The emphasis is on fresh seafood, but we offer a large range of local products," says Marketing Director Paula Finley, noting that the market will soon offer specialty packages that will include all of the ingredients customers need to make a complete meal at home. "The staff will provide advice and recipes for those who may be cooking an item for the first time or wishes to try that item with a twist," Finley says.

The back of the market's shopping area is doing double-duty as a prep space for both the restaurant and the market.

All of the seafood is cut and prepared in front of the customer. Finley says customers choose their seafood from a selection that ranges from catfish to sushi grade tuna and let the staff know how they want it. "They will cut it, filet it, whatever you want," she says. "When people buy from a fresh market they want to see the product and want to see you cut it to their specifications."

The new market is next to Crawfish Town USA, which is located in an authentic barn that dates back to the early 1900s. The barn's first transformation was in the early '80s when it opened as Hee Haw's night club. In 1986 it was remodeled into Crawfish Town USA, and five years ago the Heberts purchased the restaurant, which also offers steaks and other Cajun dishes.
